- 6 bone-in chicken thighs skin-on
- 2 tbsp olive oil
- 3 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 3/4 cup low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes chopped
- 1/3 cup Parmesan cheese freshly grated
- 1/2 tsp salt or more to taste
- 1/4 tsp pepper or more to taste
- 1 tbsp fresh parsley chopped to garnish
Instructions
Preheat the oven to 380°F/190°C. Generously season the chicken tights with salt and pepper on both sides.
Heat olive oil in a large cast-iron skillet over medium-high heat.
When hot, add the chicken to the skillet skin side down. Sear for 4 to 5 minutes until golden on each side. Remove the chicken from the skillet and keep warm.
Reduce the heat and cook minced garlic for about one minute or until fragrant. Stir in broth, heavy cream, chopped sun-dried tomatoes, and Parmesan cheese. Season with dried oregano and red pepper flakes. Bring to a simmer, then return chicken to skillet, then transfer to the preheated oven.
Bake for 15-20 minutes or until the chicken is cooked through. The internal temperature of the chicken should be 165°F.
